  • 摘要:The role and the development of Sensory Evaluation in food industry are indicated briefly and the importance of reliability of Sensory Evaluation results are stressed. The purpose and methods of Sensory Valuation, Panel, physical requirements and statistical evaluation of data constitute the main factors which have to be considered in Sensory Evaluation, and were explained and discussed in detail.
