摘要:Research on some qualities of the milk sold in the streets of Trabzon. In this study 87 samples were taken from the milk sold in the streets of Trabzon and analyzed to determine the qualities of these milk. The results are shown below: - Fat content and non fat solids content were found below the values defined by food Regulations on Raw Milk Standards in the 31.3% and 48.2% of the milk samples respectively. - In 48.3% the milk samples specific gravity was found below the predetermined limits. Statistically, it is determined that the average population gravity is outside the interval defined by the food Regulations, with 5% error. - Freezing point was found above the normal value in 75.9% of milk samples. Statistically it is determined that the freezing point of the milk is outside of the expected value, with 5% error when the significance control is made. - According to the calculations depending upon the freezing points, it is determined that the 93.2% of the samples were water diluted. - In 69% of milk samples acidity was found above the normal level. Statistically it is determined that average acidity ratio of milks was greeter than the normal value with 5% error. - According to the methylene blue test results, the bacteriological qualities were determined unsatisfactory in most of the samples. - It is determined that the 6.8% of milk samples were carbonates added. Presence of oxydizing agents was also found in 3.4% of milk samples. - Peroxidase was found inactive in the 17.2% of the samples indicating that the milks were heated at 79-80 oC or above before being sold. - 37.9% of the samples were found mastitic. According to the results of the Ring Test, 24.1% of the samples were milked from the cows possibly infected by brucella.
