摘要:Trace elements (cadmium, lead, chromium, copper, nickel, zinc etc.) from kitchen utensils can migrate into foodstuffs during the preparation of meal. It is suggested that there is little risk of metallic contamination from stainless steel containers with regard to other ports (soldered tinplate cans, glazed and unglazed earthenware dishes ceramic cups, enamel pots, etc.). In some studies, it was reported that double – bottom stainless steel pots are the superior kind of pots for retaining the mineral matter of foods.
