  • 摘要:In this paper, vitamin retention of foods cooked in conventional pots with that cooked in double based stainless steel pots (DBS) more recently commercialized in Turkey are compared. The vitamin losses in the foods cooked in DBS pots were lower than the foods cooked in conventional pots. According to these results, the use of DBS pots in cooking of foods are recommended.
