摘要:In this study, the effects of light, storage temperature and period on the discoloration and the loss of antocyanins in cornelian cherry nectars produced at laboratory scale have been investigated. The effective factors such as time, temperature and light as well as time x temperature and time x light interactions have been studied. It was determined that light and time x light interaction had no significant effect (P<0.05), whereas the effect of temperature and time x temperature interaction were found to be important (P<0.05) for all of the samples.
