摘要:The evidence that dietary fiber is of physiological importance in human nutrition had led to an increasing attention of both scientists and the general public for the fiber concept during the last decade. The analytical determination methods of dietary fiber consist of procedures in which the detergents and various enzyme systems are employed. This article will deal with the use of dietary fiber in foods, especially in cereals, and the fundamentals of the methodology as well as acid and detergent methods to determine the dietary fiber.
