摘要:Modified atmosphere packaging (MAP) has emerged as one of today’s most significant food preservation technologies. Although commercial use of MA is primarily limited to international transport of selected products, additional applications and increased use of its seem likely as the economics become more favorable. Recently, development actions have been towards adapting the technology for downstream distribution and consumer-size packaging. Purpose of controlling the biochemical, enzymatic and microbial actions and the preventing spoilage, three main gases (CO2, O2, N2) are being used on MAP. On the other hand, oxygen absorbers are also used to remove oxygen from within the package. Since oxygen absorbers reduce oxygen concentration in a container to 100 ppm or even lower order and maintain those level, they are drawing attention as a new packaging method for preserving freshness.
