  • 摘要:Mold ripened foods which are usually produced traditionally have several advantages due to their unique taste and flavor. In this literature review, mold ripened foods were evaluated in terms of their sources, vegetable and/or animal, and some information was provided concerning their production and consumption status in different parts of the world. Additionally, starter mold cultures and their properties with mycotoxin concerns in those foods were discussed in a certain detail.
