  • 摘要:In this study, chemical composition, mineral matter composition with atomic absorption spectrophotometry and protein profile with SDS-PAGE belongs to different animal carcass meats and different mecanically deboned meat (MDM) was determined. By means of this method, animal species and MDM was analyse and compare. It is found that especially protein, fat and Ca content of MDM samples are different from carcass meats. It is observe that Na amount of carcass samples are more than MDM samples. Also, in macro element to be tested Mg composition is small value. In SDS-PAGE protein profile, analysis of myofibrillar and sarcoplasmic proteins. For image and nicel analysis of electrophoresis gels was used the densitometric equipment (The Imager BL, Biolab) and UviTec software.
