  • 摘要:In the present study, 15 pomegranate cultivars, commercially growing in Turkey, was subjected to some physical and chemical analysis for characterization of the seeds. Seed ratio of the samples and one thousand seed weight were changed between 8.11-15.11% and 19.36‑36.81 g, respectively. Oil, protein, ash, and total phenolic content of pomegranate seed ranged between 13.95-24.13%, 12.35-21.28%, 1.50‑3.96%, 1535-3701 mg/kg, respectively on dry matter base. The mineral content of the pomegranate seeds was 0.308-1.399% for potassium, 0.252-0.650% for phosphorus, 0.143-0.281% for calcium, 0.107-0.276% for magnesium, 602‑1390 mg/kg for sodium, 26.69-81.12 mg/kg for iron, 15.23-40.26 mg/kg for zinc, 24.03‑38.53 mg/kg for copper, and 6.18-13.12 mg/kg for manganese.
