摘要:Data on new food product introductions suggest that the food industry has been actively responding to consumer demand for foods with improved nutritional profiles. More than 3,000 claims were made about the improved nutrient content of new foods in the first nine months of 1995—almost 3 times the number made in 1988. Anecdotal evidence points to an increased availability of nutritionally-improved substitutes for many types of food products at the supermarket. Yet, little information is available on the size of the market for nutritionally-improved foods, and their cost relative to their traditional counterparts.
