摘要:There is an increasing interest by consumers for high quality food products with a clear geographical origin. This review describes the potential use of Characterization and classification of Moroccan olive oil b y chemometrics on NIRS and GC data. The infrared spectroscopy, follo wed by chemometric treatment of the spectral data, was used to classify olives oils according to their geographical origin. The results were quite satisfactory, in spite of the similarity of cultivar co mpositions between two denominations of origin ("Meknes-Tafilalt" and "Marrakech-Tansift-Alhaouz"). The resu lts showed that NIR spectroscopy coupled with chemometric methods are an interesting technique in classifying olive oil samples. The Chemometric treatments of NIR spectra allow us to obtain similar results than those obtained by time consuming analytical techniques such as MIR and HPLC. The spectroscopic methods, combined with chemometric strategies, could represent a reliable, cheap and fast classification tool
