  • 摘要:Summary Quality control of sardine cans (SardinapilchardusWalbaum, 1792) at the site of production for the needs of Armed Forces of the Republic of Croatiawas performed for the presence of heavy metals on 27 researched samples (n=27). The average concentration of lead was 0.077±0.0816 mg/kgand of cadmium 0.0194± 0.014 mg/kg. The mercury concentration was 0.067± 0.0369 mg/kg, and arsenic concentration amounted0.775±1.006 mg/kg (n=27). Also, in can samples (n=12)11.054±9.051 mg/kgof zinc was found. The concentration of copper was 1.897±0.826 mg/kg,whereas the determined average concentration of iron was 12.73±6.5 mg/kg. Out of 27 samples there was determined correlation between the concentration of lead and cadmium (r = 0.75388, p lead and arsenic (r = -0.3985, p (r = -0.7503, p lead and iron (r= 0.72634, p for lead in sardine cans ranged from 0.0089 μg/kg do 0.046 μg/kg and “reached level” of Provisional Tolerable Weekly Intake (PTWI) for age group “adults 25 to 54 years old) amounted 0.0336%. Target Hazard Quotient (THQ) ranged from 0.00031 to 0.00158, and target cancer risk (TR) ranged from 0.0104 x 10-9 to 0.0535 x 10-9. EWI for cadmium ranged from 0.0037 μg/kg to 0.019 μg/kg, and reached level of PTWI was 0.05%. THQ ranged from 0.00051 to 0.0026. EWI for mercury ranged from 0.014 μg/kg to 0.070 μg/kg, and reached level of PTWI amounted 0.26%. THQ was from 0.00622 to 0.03196. EWI for arsenicranged from 0.069 μg/kg to 0.357 μg/kg, and reached level of PTWI amounted 0.427%. THQ ranged from 0.03187 to 0.16393, and TR for inorganic arsenicranged from 0.0143 x 10-6 to 0.0737 x 10-6. EWI for zinc ranged from 2.02 μg/kg to 10.4 μg/kg, andreached level of PTWI was 0.36%. EWI for copper ranged from 0.4 μg/kg to 2.07 μg/kg, and reached level of PTWI was 0.076%. EWI for iron ranged from 2.78 μg/kg to 14.3 μg/kg, and reached level of PTWI was 0.325%.The research results have proved the health safety of sardine cans, which is in accordance with the regulations of the Republic of Croatia. Carcinogenic risk assessment of sardine cans indicates that there is no health risk according to the recommendations of FAO/WHO.
