摘要:Acrylamide is a human neurotoxin and is also a mutagenic and genotoxic agent. The IARC classified acrylamide as a possible human carcinogen. Due to a wide occurrence of acrylamide in many staple cereal- and potato- based foods and coffee the exposure to acrylamide cannot be omitted. This study is focused on the evaluation of the first preliminary survey on the acrylamide exposure in Slovak and Czech Republics. A frequency and a distribution of consumption of food with a supposed higher acrylamide level during a day were ascertained and evaluated depending on gender, age, and nationality of consumers. Based on these data the exposure of various consumer groups was estimated. Cereal based snacks were identified as the most frequent source of acrylamide exposure in all consumers. The highest intake of acrylamide – app. 2.7 μg per kg of body weight daily – was observed in the group below 20, which is a result of higher consumption of biscuits. With an increasing age of consumers coffee becomes a major source of acrylamide intake. Distribution of consumption revealed biscuits, as a main contributor to acrylamide intake during a day, which is consumed besides main meal. Differences between acrylamide exposure in Slovak and Czech consumers cannot be evaluated correctly due to disproportions in numbers of respondents.der
