摘要:Potatoes are the most important
vegetable crop in the
United States. The crop¡¯s 1999
farm receipts totaled $2.7 billion, or
18 percent of all vegetable and
melon farm cash receipts. Potatoes,
rich in vitamin C, potassium, and
other vital nutrients, are a staple
food in the United States. The 1999
per capita consumption of vegetables
was 454 pounds, fresh-weight
equivalent, of which 142 pounds, or
31 percent, were potatoes. Pound for
pound among U.S. crops, potatoes
are topped only by wheat flour in
importance in the U.S. diet. The
most significant changes in potato
consumption over the past several
decades have been the rise of frozen
potato use and the decline of fresh
potato use.
