  • 标题:Antibacterial Activity of the Lactoperoxidase System against Isolates from the Feces of Diarrheal Patients in Associative Cultures with Lactic Acid Bacteria from Foods

  • 摘要:The antibacterial effects of L. acidophilus YIT 0179, lactic acid bacterium (LAB) 8611 (isolated from drug including L. casei ) or 8652 (from raw milk) on Eschrichia coli 06 OCIT1, Salmonella typhimurium OCIW1 or Campylobacter jejuni OCIA67 (from the feces of diarrheal patients) were examined in lactoperoxidase (LPO) system. By an associative culture with LAB 8652, E. coli 06 OCIT1 was inhibited from growing and particularly incurred bactericidal effect only in culture medium containing both LPO and thiocyanate, and S. typhimurium OCIW1 died in the medium including LPO and/or thiocyanate. But L. acidophilus YIT 0179 or LAB 8611 had no typical effect on the growth of E.coli 06 OCIT1 or S. typhimurium OCIW1. Furthermore, L. acidophilus YIT 0179, LAB 8611 or 8652 showed no bactericidal activity against C. jejuni OCIA67 in the associative culture in the LPO system. The bactericidal effect or growth inhibition on E. coli 06 OCIT1 or, S. typhimurium OCIW1 in the associative culture with lactic acid bacteria was not dependent on pH decrease with the accumulation of lactic acid. Thirty out of 55 isolates of lactic acid bacteria from foods had the bactericidal effct on E. coli OCIT1 in the associative culture in the LPO system. Most of the lactic acid bacteria having the bactericidal activity were isolates from raw milk, cheese, pickled Chinese cabbage and certain lactic acid beverages.
