摘要:The intake of fatty acids was calculated from a school lunch menu at H-city, and that of dietary fiber at H- and O-city. The amounts of cholesterol, saturated acids, monounsaturated acids and polyunsaturated acids in the menu of H-city were higher than standard values quoted from reference 8. As polysaturated acids, the intake of linolic acid was higher and α-linoleic acid and arachidonic acid were lower than standard values. The ratio of n-3/n-6 was 0.19 for the menu at H-city. The amount of dietary fiber was 3.9g in the school lunch at H-city. This is insufficient in the amount compared to other reports. In the lunch menu of O-city, Japanese type side dishes had larger amount of dietary fiber than the western type diet (bread type).
