摘要：The effect of nickel on the oxidation of lard was investigated using an oven test at 60°C and the conductimetric determination method (CDM test). High levels (50-500ppm) of Ni accelerated oxidation slightly in both the oven test and the CDM test. However, the effect of nickel was very slight compared to that of copper or iron.
