摘要:Groundnuts are fairly rich in niacin. Bioavailability of niacin from roasted and boiled groundnuts was assessed in adult human subjects. A local variety commonly cultivated in Andhra Pradesh, India was used in the study. Six women in the age range of 23-25 years were selected for the study. The linear dose response technique was used to assess the availability. Excretion of N 1-methylnicotinamide in urine was used as an index of assessment. The results revealed that 87.0 to 91.7% of niacin was available from roasted and boiled groundnuts, respectively.
