摘要:Aimed at developing a kinetic model to explain the formation of crystalline monopotassium citrate agglomerates during the storage of frozen concentrated orange juice, samples were stored at -10 and -15 x C for 18 months, and agglomerate formation quantified gravimetrically. An eight compartment kinetic model was developed using compartmental analysis methodology to represent the various stages of agglomerate formation from citrate anel potassium ions. The kinetic constants calculated indicated a quicker formation at higher storage temperatures. The proposed kinetic model showed good agreement with the experimental data, thus proving its valielity The results coulel be used to preelict the formation of the agglomerates anel help in the choice of storage temperature.
