  • 摘要:The objectives of this work were demonstrate the occurrence of pancreatic hypertrophy in rats, caused by chickpea protein intake, and the possible relation to the presence of trypsin inhibitors in the protein samples. The principal protein fractions of chickpea were isolated, the effect of heating was also tested (121°C/15 min). The heated chickpea diets did not cause significant pancreatic hypertrophy in rats, in relation to the casein control group. Only unheated chickpea flour and albumin diets caused pancreatic weight increases correlating to the presence of trypsin inhibitors in these samples. Apart from the trypsin inhibitor activity the other chickpea protein components appear not to exert any alteration in pancreatic weight.
