  • 摘要:Reducing the cost of electricity consumed when cutting frozen raw materials in the meat processing industry can significantly improve profitability and other economic indicators. The possibility of energy saving in the innovative technology of one-stage fine grinding of food raw materials was studied. The selected frozen meat blocks (beef and pork) and collagen-containing raw materials (meat cuttings and tripe) were ground to the required degree usingan experimental IBF-1 grinder. At the same time, the active three-phase power consumed by the electric motor of the cutting mechanism drive was measured and recorded. The study results showed that the IBF-1 grinder (milling method) could replace three machines (frozen meat cutter, meat comminutor, and micro cutter) with sequential grinding in three stages according to the standard grinding technology. The calculations carried out on the power costs per ton of products confirm that grinding requires 2.6 times less than the total installed capacity of meatcutting machines of the standard technological chain.
